I am a big snacker. I eat small meals but in between, I am forever munching on something. Most of the time its banana chips. I am an addict. I eat a bag in like 5 minutes. Other times, its a piece of chocolate, peanut brittle or yogurt with fruits. Generally, a healthy snacker but I was getting tired of the same old stuff. So I made a bag of this rosemary nut mix, loosely inspired by Ottolenghi's recipe.
You can use any combination of nuts and seeds: I used a handful of almonds, cashew, pumpkin and nigella seeds. Add a little olive oil, honey, chopped rosemary and a good sprinkling of sea salt. Once baked, mix in paprika powder and ground black pepper while the mixture is still hot. I think this is a neat little trick to ensure there is even coating of spices and all the oil gets absorbed leaving you with really addictive nut mix.
This is a simple and tasty recipe to have on hand for snack related emergency or something to munch on while you enjoy a stiff drink.
