January has been a blur of road trips, splashing around the pool, eating delicious fish curries and grilled prawns fresh from the sea, catching up with family and friends, gazing at the sunset while sipping strawberry margaritas, running after my dogs in the local vineyard and lots of great books. Really, it has been that dreamy.
I have been in and out of Goa with my husband and our dogs for my birthday, our anniversary, mother in law's 6oth(!) birthday and his birthday! Yes, lots to celebrate. So basically from Christmas until the first week of February has been one long holiday.
To ease back into the daily grind, I looked for some baking inspiration and came across this recipe on Food52 and craved a slice almost immediately. Because who can resist the title of the most addictive bread you will ever eat? Not me, for sure.
I am happy to report that yes, it is addictive. And buttery with flakes of sea salt to marry all the flavours together. It basically tastes like a brioche but richer. Honestly, I tore off chunks of it straight from the oven because it looked so inviting. You can be a civilised adult and slice the loaf, toast it, make sandwiches or bread pudding. I'm going to turn mine into french toast and pretend I am still on vacation.
